chicken with apricots and currants:
4-6 split chicken breasts or other pieces
1/2 cup bitter orange marmalade
1/4-1/2 cup orange juice
1/4-1/2 cup apple juice
1/4 cup currants
1/2 cup dried apricots cut up
1/2 tsp ground ginger for each chicken piece
olive oil
salt and pepper to taste
lightly sprinkle olive oil on chicken pieces. rub each chicken piece with the ginger and lay in a shallow casserole. pour orange and apple juice gently around the chicken (adjust the balance to make sweeter or more tart depending on your taste). spread about 1-2 tbsp marmalade on each chicken piece, and scatter currants and apricots through the pan. bake at 350 degrees for 40 minutes, basting frequently and test after about half an hour.
this is really light and fruity, good with white basmati rice or vegetables.
