chicken marinade


this will do for a whole mess of poultry...supposedly it goes really well
with pork (so says mike brown), but i can't verify that. :)

1 jar of apricot-pineapple preserves (plum is also really good)
1 c dry white wine
4 T tamari or soy sauce
3 T crushed garlic
1 T onion powder
juice of 1 lemon
1-2 t ginger (depending on how pungent you want it)
1 1/2 t salt
an abundance of pepper
3/4 c vegetable oil...if you can spring for sesame oil you can replace a T
or two of the vegetable with it, although it's pretty expensive stuff.
but tasty.
a whole mess of toasted sesame seeds

let cheeken soak in it overnight or as long as possible & baste while
cooking.

it's perfectly okay if you think that's gross, it's just something that i
made up.
