[vegetarian dumplings]
wrapper:
flour
water
*you can buy ready-made wrappers at any asian food store, and seeing as
this part can take like 2 hours, you might want to do that instead.
innards:
black mushrooms
napa cabbage
one package of frozen chopped spinach (thawed)
green onions
(whatever else)
dipping sauce (just mix a bunch of this together)
soy sauce (like 3-4 T)
rice vinegar (like, 5-6 drops)
sesame oil (like 1-2 drops)
red pepper (a little bit)
green onion (half of one, the green part, chopped finely)
...and a bit of hoisin sauce if you want
instructions:

mix about 2c flour with water to make dough
knead the dough gently just so that it's even
place under a big mixing bowl and let sit for 10 minutes.
every 10 minutes, give it a poke (like knead gently once or twice),
then stick it under the bowl again.
continue to do this until you've finished making the filling part
(about 5-6x)
filling
1. chop up 3-4 black mushrooms into small pieces (about 1/4" cubes)
2. take 4-5 leaves of napa cabbage, dump in boiling water for one
minute. rinse with cold water and drain (squeeze most of the water
out of it w/o ruining the leaves). chop up into similarly sized
cubes as the mushrooms.
3. squeeze the water out of the thawed spinach
4. chop two-three green onions finely
5. dump these vegs. into a big bowl and mix up. if you want to add
more vegs, feel free. i can't think of any others that i'd put
in at this point, though.
6. add 1T soy sauce
7. add 3 drops sesame oil (or so)
8. mix thoroughly
next (the tedious part)
take a handful of dough
roll into a log about 10" long and 1" in diameter
slice the log into pieces about 1/2" wide
using a rolling pin, flatten each piece and fill with a spoonful of filling
(maybe a teaspoon or so).
pinch the wrapper closed around the filling
do this until the dough is finished, or until you |
